On August 3rd, we celebrate this ancient berry in a feast of juicy deliciousness—otherwise known as National Watermelon Day. Did you know that watermelon is 92% water? No wonder it’s so refreshing and smells enticing just like our candle. In honor of National Watermelon Day, we are re-imaging our Watermelon Mimosa candle into an awesome brunch cocktail but also makes perfect ending to a summer evening.
Ingredients:
4 cups Watermelon (cubed)
1 Brut bottle champagne or prosecco
3 oz Simple Syrup (more for sweetness)
1 bottle champagne or sparkling wine (non-alcoholic)
Watermelon wedges, for garnish
Mint for garnish (optional)

First, you must cut the watermelon into cubes. Our friends at 84th and 3rd has a simple yet brilliant technique to cut watermelon into cubes. I was amazed how efficient the technique helped with the process. But make sure you flip the watermelon over the sink...it can get a little messy!
After cutting the watermelon into cubes, add 4 cups of watermelon into the blender, 3 oz. of the simple syrup and ice.
Strain the watermelon juice into a bowl.
Fill champagne flutes halfway with watermelon mixture and top off with champagne. Garnish glasses with a few mint sprigs and a watermelon wedge.
